What is A Raw Food Diet

Raw food diet is derived from the notion stating that the most beneficial foods for a person’s health are uncooked. Even though the vast majority of foods in this diet is raw, you can still heat your food, provided that the temperature does not exceed 118 degrees Fahrenheit.

Cooking food can destroy the natural properties of enzymes found in them. Raw food dietitians say that enzymes help the body in assimilating food and in absorbing nutrients. If you overindulge in cooked food, your body is obliged to develop more enzymes. In due course, insufficiency of enzymes may result to nutrient deficiency, weight gain, digestive problems and fast aging.

When you cook food, you are also reducing its nutritional value. For instance, when you cook broccoli, sulforaphanes, a cancer-resisting substance, are significantly reduced. However, there are some foods that can increase their nutritional value after heating or cooking. These foods are capable of destroying their fibrous components. For instance, tomatoes increase their nutritional value about 4 times when cooked. In addition, cooking can lead to the proliferation of harmful elements found in the food.
