【咖啡萃取】
烘焙是透過加熱的過程讓咖啡豆中的纖維組織轉化成適合萃取的環境。生豆經由烘焙產生的物理和化學反應,促使多孔組織(物體內部和表面有多個小洞的結構)膨脹,可溶成份隨之增加,香氣化合物開始釋放。烘焙過後的生豆密度會降低,轉變為適合研磨的狀態。
由脂肪質組成的咖啡豆細胞壁充斥著香氣化合物和可溶成份,在研磨後的咖啡豆注入水,顆粒的表面被水團團包圍,促使水溶性固體溶解。這種藉由水在咖啡粉粒中流動來分離咖啡成份的過程,即稱為「萃取」(extraction)。
